For centuries, Jameson Irish Whiskey has been celebrated for its distinct taste and smooth character. Behind every bottle of this iconic spirit lies a meticulously crafted distillery process that combines traditional methods with innovation. We were at the recently held #JamesonDistilleryOnTour to experience the original distillery process that continues to attract hundreds of thousands of tourists annually to the distillery in Ireland. 

In this article, we will journey through the various stages of the Jameson Whiskey distillation process, revealing the artistry and precision that create this world-renowned whiskey.

The journey of Jameson whiskey begins with the careful selection of the finest ingredients:

1.1. Barley: Jameson primarily uses malted and unmalted barley in its mash bill. This combination brings depth and complexity to the whiskey’s flavour profile, with the malted barley offering a sweet, malty character and the unmalted barley providing a distinctive edge.

1.2. Pure Water: Water is a crucial component in the distillation process. Jameson sources pure, soft water from the local springs of the Dungourney River, which flows right through our distillery and enhances the whiskey’s overall taste and consistency.

1.3. Yeast: The yeast strains employed during fermentation play a significant role in converting barley sugars into alcohol. Jameson’s carefully cultivated yeast strains contribute unique flavours and aromas to the final product.

The next step in the Jameson distillery process involves the mashing of the grains and their fermentation:

2.1. Mashing: The malted and unmalted barley is ground into a coarse meal, mixed with hot water, and allowed to ferment, converting starches into fermentable sugars. This “mash” is then strained to obtain the sugary liquid known as “wort.”

2.2. Fermentation: The wort is cooled, and yeast is added, initiating fermentation. This process takes several days, during which the yeast consumes the sugars, producing alcohol and creating a beer-like liquid known as “Wash.”

The distillation process is where Jameson truly defines its character:

3.1. Triple Distillation: Jameson whiskey stands out with its triple distillation method. After fermentation, the Wash is distilled three times – a unique approach in the whiskey world. This triple distillation is a time-consuming and labour-intensive process, but it is a crucial step in achieving the smooth and refined taste that Jameson is known for. The first distillation removes impurities and unwanted flavours, allowing for a purer spirit. The second distillation further refines the spirit, enhancing its character and depth. Finally, the third distillation brings the spirit to its desired strength and purity.

3.2. Copper Pot Stills: The Wash is distilled in traditional copper pot stills, contributing to the whiskey’s character. Copper removes impurities and creates a rich and smooth texture, a hallmark of Jameson’s flavour.

Maturation: The Elixir of Time and Tradition

Following distillation, the whiskey is transferred to oak barrels for maturation:

4.1. Oak Barrels: Jameson combines American oak and sherry-seasoned oak casks. These barrels impart flavours like vanilla, spice, and dried fruit to the whiskey while smoothing the spirit over time.

4.2. Aging: Jameson whiskey is aged for at least three years, with some batches spending much longer in the barrels. The ageing process allows the spirit to interact with the wood, evolving its character and complexity.

4.3. Blending: The final touch involves the skilful blending of different casks by Jameson’s master distillers. They expertly select and combine various barrels to create a harmonious and consistent whiskey that meets the brand’s exacting standards.
